Salad Dressing Makeover (Oxygen magazine)

Creamy Avocado Dressing
1/3 cup olive oil
1 clove garlic, minced
3/4 cup fresh cilantro, chopped
2 ripe avocados, cubed
1 large English cucumber, peeled and diced
1/4 cup lemon juice
Sea salt and black pepper, to taste
Blend all ingredients in a food processor or blender. Store in a jar. Label and date, and use within a week.

 Creamy Italian Dressing
1 cup nonfat Greek yogurt
2 tblsp red wine vinegar
1 tblsp Parmesan, grated
1 tsp lemon juice
1 clove garlic, minced
1 tsp raw honey
2 green onions, white parts only, minced
1/4 tsp dried oregano
1/4 tsp ground black pepper
1// tsp sea salt
Blend all ingredients in a food processor or blender. Store in a jar. Label and use within a month.
